Caribbean Sweet Potatoes

Here is a recipe from Bibby Gignilliat when she was an instructor at Tante Marie’s. It would be great served with Jerk Chicken or Pork.


  • 4 pounds sweet potatoes or yams, peeled
  • 1/2 cup olive oil
  • kosher salt and freshly ground pepper
  • 1/4 cup lime juice


Pre-heat oven to 425 degrees.

Cut sweet potatoes length-wise in quarters. Toss in olive oil, salt and pepper. Roast until tender, about 25 minutes.

Remove from oven and let cool slightly. Drizzle with lime juice and season to taste with salt and pepper. Serve immediately.
