Mr. Williams’ Crust-less Broccoli-Ham Quiche

This is a fun breakfast or luncheon dish.


  • 2 cups cooked broccoli, cut into tiny florets
  • 1 cup heavy cream
  • 1 cup milk
  • 4 eggs
  • 1/2 cup diced ham
  • 3/4 cup coarsely grated Gruyere or Comte cheese
  • 2 tsp. lemon juice
  • Coarse salt and freshly ground black pepper
  • 1/2 cup finely grated Parmesan cheese


Preheat oven to 325 degrees. Generously butter a 8-or 9-inch glass or ceramic pie plate. In a large bowl, mix together the broccoli, cream, milk, eggs, ham, Gruyere, and lemon juice. Season with salt, and pepper. Pour into the prepared plate and sprinkle with Parmesan. Bake in the preheated oven until the eggs are set, about 30 minutes. Let cool 5 minutes before serving.
