White Chocolate Medallions with Cranberries and Pistachios

Here is a fun and easy confection to make for gift giving during the holiday season!


  • 1/2 cup moist-pack dried cranberries
  • 1/2 cup shelled pistachios
  • 2 oz. semisweet (or bittersweet) chocolate


Spread the melted white chocolate about 1/4-inch thick the bottom of 12 paper muffin cups, quickly press the cranberries and pistachios on top. Chill. When completely cooled, remove the paper and paint the bottoms of the rounds with melted dark chocolate.

Makes 24 pieces.
