Fresh Berries in Beaujolais

Compote of Fresh Berries With Beaujolais

Ingredients

  • 1 pint fresh strawberries, halved or quartered if large berries_compote
  • 1/2 pint fresh raspberries
  • 1 pint fresh blackberries (or blueberries)
  • 1 cup water
  • 1/2 cup sugar
  • 1/2 bottle Gamay Beaujolais

 

Directions

In a medium-sized non-reactive saucepan, melt the water with the sugar, stirring continually until the liquid is clear. Remove from the heat. Let cool for 10 minutes, then add the wine and the fruit. Let chill in the refrigerator until 1/2 hour before serving.

Serving a tissane of fresh herbs after a meal makes everyone feel good and sleep well.


 

Fresh Herb Tissane

Ingredients

  • 3 sprigs lemon verbena tissane_tea
  • 4 sprigs fresh mint

 

Directions

Pick over the berries, removing any dirt or green stems. Place in a stainless steel bowl.

Place 1/2 cup fresh herbs in a warmed teapot, pour over 4 cups rapidly boiling water. Let steep 3-4 minutes and serve.

Serves 6 – 8.
