Grilled Salmon with Thai Salsa

Although this recipe is not-at-all authentic Thai, it’s still good! You can serve the sauce on grilled chicken too.

Ingredients

  • 3 lb. filet of salmon, cut into 8 pieces
  • salt and pepper
  • 3/4 cup rice wine vinegar
  • 1/2 cup light soy sauce
  • 1/2 cup light corn syrup
  • 1/2 cup lemon or lime juice
  • 2 cups peanut oil
  • 1/3 cup grated ginger
  • 1/4 cup minced garlic
  • 3/4 cup chopped cilantro
  • 1 cup green onions, chopped
  • 1/2 cup chopped mint
  • 1 cup red jalapeno, minced
  • 2 cups peanuts, chopped

Directions

Lightly season the fish with salt, pepper and rub with oil and leave until ready to grill.

In a bowl combine the vinegar mixture. In another bowl combine the ginger mixture.

Grill the salmon over a hot charcoal fire, or pan steam in a non-stick pan, until just cooked. Combine the two mixtures and serve over the salmon.
